Salmonella Enteritidis (SE) is the second most commonly isolated Salmonella sero-type from humans according to the CDC, responsible for over 200,000 illnesses a year in the US.  About 64% of those illnesses are attributed to eggs or egg containing products.   

Salmonella Enteritidis Egg Contamination Begins in the Layer House Environment

So how does the egg become contaminated with SE? 

  • Contamination of the hen house environment through rodents, flies, etc. that have been exposed to SE. 
  • Hens then ingest SE through feed or insects.
  • SE then multiplies in the organs, such as the ovaries, of the hen, while not affecting the health of the hen.
  • SE is now available to potentially contaminate developing eggs within the hen.

If contamination of the hen house environment is found via routine environmental monitoring, it can be potentially eliminated or reduced.  This will halt or reduce SE exposure to the hen and ultimately to the egg.  If SE is kept from the environment, eggs will ultimately be kept SE-free.

Where SE Contamination in Eggs Begins

FDA Final Rule (21 CFR Parts 16 and 118) to Control SE in Shell Eggs

The July 9, 2010 implementation of the FDA Final Rule (21 CFR Parts 16 and 118) to control SE contamination of shell eggs during production, storage and transport is one avenue aimed at reducing human illness caused by eggs.  The Rule focuses on monitoring the layer house environment for the presence of SE and keeping the environment free from the pathogen and potential vectors of SE such as rodents and flies. 

The Rule dictates that if SE is found in the environment, eggs must then be screened for the presence of SE, to keep any contaminated eggs from reaching the consumer market.
